Saluf/Salouf - Yemenite Traditional Flatbread

Saluf/Saloof is a traditional Yemenite flat bread which is baked in Taboun oven. This incredible flatbread is definitely an excellent dish to give a try, if you feel like having a different flatbread. When i went through this post, i completely fallen in love with this interesting flatbread. Actually a wet dough of saluf is slapped against taboun wall, once its gets cooked this bread will fell down off. To prepare this flatbread, two techniques pf preparing the doughs do exists. Either prepare a sticky batter of this bread to do or else use less water to get a stiff dough and shape. If you are planning to make a wet dough, your salufs will definitely turns soft and puffy,though the stiff dough works awesome as well.


Am running my second week of blogging marathon with Flatbreads as theme, i just love flatbreads. Whenever i get a chance to try my hands to make some flatbreads i dont forget to make them without any fail. When i saw the themes for this month's blogging marathon, i couldnt resist myself to pick this flatbread theme immediately. Hence am posting some beautiful flatbreads from three different countries, and the first flatbread is from Yemen. You can serve this yeasted flatbread with any sort of spicy sauce, though you can make fantastic wraps with it. I prepared some meaty wraps with this bread and we had a filling dinner.


3cups All purpose flour
1+1/4cup Water
1tsp Fenugreek seed powder
1tsp Salt
1tsp Instant yeast

take the flour, fenugreek seed powder, salt, instant yeast in a bowl, add lukewarm water and knead everything a soft, stiff dough.

Cover the bowl and let it sit in a warm place until the dough doubles in size. Punch down the dough, divide the dough as 5-6 balls.

Heat a pan in high flame, meanwhile roll each ball into a bit thick disc.

Now drop the rolled dough into a oiled pan, cover and cook in low flame on medium heat until the saluf turns slightly brown.

Continue the same process with the remaining dough.

Enjoy with your favourite spread or sauce.

I have seen on TV the way they make bread by slapping against wall - so interesting. This bread looks so soft and fluffy

Fenugreek powder is such an interesting ingredient in a flatbread. They look great.
